Patton's modulated voice smoothly delivers the scientific research, while his well-timed pauses highlight the stunning statistics on obesity and the paradoxes of our culture's love-hate obsession with food. The author also discusses how food technology and marketing determine much of what we choose to eat and what we really taste.
